I hope you’re enjoying the day of love wherever you are in the world! My perfect Valentine present is surprise surprise – A book! Followed closely by a sleep in! Actually an early night, reading said book, and a sleep in the next day! (It’s glaringly obvious I am a mum, isn’t it!)
As you might know from the titles of my books, I also like cooking! Food plays a huge part of our life, we enjoy the process of making it, an trying new recipes, as well as entertaining friends and family in the typical relaxed Australian fashion – outside, watching the kids play! I thought I’d share a recipe with you today, something simple that you can whip up for your loved one! Jam jar desserts are the latest thing, and I love the way they look, and how quick and simple they are to make.
So for a sexy Valentine dessert in a jar, here’s my easy peasy Eton Mess recipe,
For two jars:
1/2 cup of fresh raspberries
1/2 cup of fresh strawberries
1 passion fruit
Single serve meringues (or make your own)
Double cream mixed with a dash of vanilla essence
Mint leaves
Break the meringues up and quarter the strawberries, then begin layering with the jar with all the ingredients, rustic – yes! Garnish with mint leaves. It’s a simple dessert that tastes amazing and looks extra special in the jam jar. You can also make it fancier by making a blackberry coulis to pour through the layers.
Simple, fruity, creamy and delectable, and quick to make if you’re planning a last minute Valentine.
